Andrea's chocolate cake recipe is legendary among our family and friends! It takes a bit of time, but is so worth it!
It's rich and indulgent, it makes a big cake if you have a lot of people to share it with, and it can also be frozen!
Cake Ingredients
1 cup cold water
Half cup cooking oil
Half cup cocoa
125g butter
2 cups cake flour
2 cups castor sugar
2 tsp bicarbonate of soda
2 tsp baking powder
1 tsp salt
2 eggs
Half cup double cream
Cake Method
Preheat your oven to 190° C. Heat the water, oil, cocoa and butter on a medium heat, stirring all the time until it reaches boiling point. Set that aside to cool. Sift the flour, sugar, salt, baking powder and bicarbonate of soda together. In another bowl, beat the eggs and add the cream, mixing them together. Fold the dry ingredients into the wet mixture. Grease a large roasting tin (or use Spray & Cook or something similar). Pour the mixture into the roasting tin, and bake for 30 minutes. Turn the oven off and crack the door open for 5 minutes. Take the cake out and turn it onto a cooling rack.
Icing Ingredients
5 tbsp butter
3 tbsp double cream
2 tbsp cocoa
1 tsp vanilla extract
1-2 cups icing sugar
Icing Method
Put all the ingredients into a pot, and heat gently until everything is well blended. Let it cool a little, and ice the cake while the cake and the icing are still a little warm.
