This vanilla cupcake recipe is quick and easy, and also great for kids to make.
They're quick to mix and quick to bake, are deliciously light and fluffy, and you can freeze leftovers (if there are any ;-).
Ingredients
1 ½ cups flour
¾ cup sugar
2 tsp baking powder
½ tsp salt
½ cup milk
½ cup oil
2 eggs
1 tsp vanilla essence
Method
This couldn't be simpler! Add all ingredients to your mixing bowl (sift dry ingredients then add wet ingredients). Beat or whisk until the mixture is smooth. Fill each muffin cup about ¾ full. Bake at 180°C for 15 minutes. Rest cupcakes on a grid to cool.
